Mesquite plants are bushes or small trees that grow in the arid regions of the US Southwest and Mexico. Mesquite wood is highly rated as a BBQ wood.
In spring, mesquite plants produce clusters of yellow flowers. Each flower develops into a bean which begins as a green pod. Depending on the species, the beans (pods) may be straight, slightly curved or corkscrew shaped. Mesquite beans when mature are dry and brittle. They can be used to make jellies, jams, syrups and wine. Even ground into flour and used in baking.
Try on toast, pancakes or crumpets. May be used to make glazes for muffins or grilled chicken and pork.
