Cuitlacoche or Huitlacoche, Mexican Corn Truffles. a Mexican delicacy used in preparing quesadillas and soups, also called the Mexican caviar, corn smut or maize mushrooms.

Tacos de Huitlacoche Ingredients:
2 tablespoons butter 1/2 white onion, finely diced 200gm of huitlacoche 1 t dried epazote 1 cup queso fresco, crumbled (if you can find it) or shredded Jack cheese 6 corn tortillas
Method: Melt butter in a medium pan. Add onion and epazote and cook until onion is transparent. Add huitlacoche and cook for 5-7 minutes or until the huitlacoche juice has evaporated.
Serve immediately in corn tortillas and top with crumbled cheese.
