Tamales are a favorite comfort food in Mexico, eaten at both breakfast and dinner or as snacks throughout the day.
The most common fillings are pork and chicken, in either red or green salsa or mole and wrapped in corn husks. Another traditional variation is to add pink-colored sugar to the corn mix and fill it with raisins or other dried fruit and make a sweet tamal de dulce.
To use, soak in water for 30-60 minutes to soften.

Also note: it is possible/likely spots of blackish mildew/mould will be present on some pieces; this is endemic to the product and cannot be fully avoided. When calculating volume needs consider that some husks may be discarded.
