Chile Guajillo isa member of the New Mexico pod type and has a more earthy/charcoal flavour than it’s bright-coloured cousins and, typically, a bit more kick.

A bright tangy chile, It is classically used in salsas fritas (fried salsas) pureed moles and long-stew sauces.  The flake form of this chile ensures that its rich flavor is easily distributed throughout any dish, its subtle heat and ability to infuse dishes with a depth of flavor that’s hard to replicate with any other spice.
