Pimientos de Padrón are small green peppers named after a town in Galicia Spain. They are usually fried in salt and served as a tapa.
Chile Padron are about 5 cm long with an elongated conic shape and a color ranging from bright green to yellowish green.
Their peculiarity lies on the fact that, while they are usually mild, a minority (10-25%) are particularly hot. Typically, there is no way of determining whether a given pepper will be hot or mild, short of actually eating it. Hee hee, ha ha.
