Queso Oaxaca Fresh Mexican Cheese 1kg

Queso Oaxaca is a traditional Mexican-style cheese which comes like a knotted ball.  It has a mild, creamy flavour with a salty-sour tang.

It melts easily which makes it perfect for a variety of Mexican dishes, including quesadillas and enchiladas.  It is also often used fresh to finish dishes; simply shredded and sprinkled as a garnish on top of soups, tostadas, tacos and beans.

Cow’s milk is used to make this stretched curd style of cheese.  To make it requires skill and the ability to ‘read’ the cheese over each production step.  First farm fresh milk is pasteurised before non-animal rennet and citric acid are added to transform it into a custard-like consistency which is then carefully cut by hand at just the right moment, to separate the curds and the whey.  Next, the curd is stretched which allows it to be moulded into long strands of cheese which are then wrapped up like a ball of yarn.

Ingredients: Pasteurised Cow's Milk, Rennet (Non Animal), Salt, Citric Acid.
