A wonderful sauce with a slow creeping heat, with flavours that transition as your tongue goes through, smoke, a lot of fruity sweetness, and some tart vegetable notes.
This sauce will be sure to win a place at your table.
Ingredients: Red Savina Mash, Carrots, Onions, White Vinegar, Brown Sugar, Papaya Juice, Pineapple Juice, Banana, Brown Rum, Lime Juice, Pepper Extract, Salt, and spices.
I know this sauce says "West Africa" but for me suggests a distinct Caribbean jerk character with the juicy tropical flavours at the front especially pineapple and papaya and also the smooth savoury-sweetness of banana, supported with very confident Pimiento. The ingredients label on my bottle lists red habanero as the primary pepper and does not mention pepper extract. I do not detect the bitterness of extract, or that immediacy of heat. But make no mistake, the peppers are spicy and the more you eat the hotter you heat. All of the creators love and attention to the flavour profile make this a delicious sauce.
