Aji Panca Seco is a sun-dried pepper with a unique flavour and intensity. Ají panca is darker, sweeter, and milder than Aji Mirasol (amarillo) and closer in flavor and heat to a Mexican Ancho, though still with that sweetness that both aji panca and amarillo classically have.
Sometimes known as aji colorado, it is one of the most commonly used peppers used in Peru.
Similar in shape to the Ají Amarillo, it is a deep red to burgundy colour measuring 7-12cm long. Less spicy than the Amarillo (or Mirasol) with a rather sweet, berry-like, and slightly smoky flavour.
This delicious pepper is used in many Peruvian recipes and is also great for stews, sauces and bean dishes.
