Achiote Liquid is a Yucatan-style sauce from ground annatto seeds, spices and tomatoes.
Delicious achiote, also known as "Recado Rojo".
The condiment Achiote (ah-chee-OH-tay), made with annatto seeds, spices and tomatos. Used to give color and is an excellent seasoning. Annatto seeds are grown in the humid tropical weather of the Yucatan Peninsula in the southeast of Mexico. It is an ideal marinate for grilled or roasted beef, chicken and the most famous Cochinita Pibil.
It's really easy to prepare! Use 50 ml of liquid annatto to marinate and season 1kg of beef, pork, chicken or fish. Ready to use.
Ingredients: water, annato seed, corn flour, salt, spices, acidity regulator (330, 260), stabiliser (415), preservative (211) and antioxidant (385).
Try this simple recipe: CHICKEN BREAST WITH ACHIOTE
INGREDIENTS:
4 skinless chicken breasts
¾ cup liquid El Yucateco Annatto / Achiote
¼ cup orange juice
2 tablespoons of white or apple cider vinegar
1 red onion, sliced
Salt and Mexican oregano
INSTRUCTIONS:
1. Combine annatto/achiote, juice, vinegar and salt.
2. Top the chicken breasts with the annatto/achiote mixture. Let them marinate overnight or a few hours in a bag or container in the refrigerator.
3. Place the chicken breasts in a greased tray or baking pan; bake them at 175°C for about 45 to 50 minutes. Serve them with red onion mixed with oregano and lemon or vinegar.
