The Yucatan-style paste achiote (ah-chee-OH-tay) is made from annatto seeds, spices and tomatoes. It is used to give color and is also an excellent seasoning. Annatto seeds are grown in the humid tropical weather of the Yucatan Peninsula in the southeast of Mexico. It is ideal to marinate or to prepare grilled or roasted beef, chicken and the most famous Cochinita Pibil.
