Cuitlacoche or huitlacoche is like a cross between corn and mushrooms. It is a totally Mexican product, made from the benign funghi that grows on corn kernals. This funghi causes a change to the corn kernal which produces bigger black-purple grains with a softer texture.
Try it in a corn & zucchini omlet, Tacos, Chicken Breast stuffed with huitlacoche, pasta with a huitlacoche sauce, Crepes with huitlacoche stuffing and white sauce.
Huitlacoche is also called Mexican truffles.
