Blue corn is valued by the Hopi for its rich cultural significance. Warriors believed that eating it before a long journey would bring safety; women used it in the naming ceremonies of their babies.
Providing wonderful nutritional benefits, blue corn can be eaten like sweet corn when young. Older cobs are dried and ground into flour to use in making tortillas and many other baking applications! Containing 20% more protein and with a lower glycemic index than yellow corn it is a wonderful addition to your diet and your garden.
A tall plant, reaching 180cm with cobs maturing around 100 days.
1-2 narrow cobs up to 18cm long are produced on each plant.
Drought tolerant; excellent for dry conditions.
